The Agriculture Department announced that lean beef will be renamed “USDA Select” to improve the image of low-fat beef and to encourage consumers to choose leaner cuts of meat. As of Nov. 23, the new name will be used in place of “USDA Good.” Other grades include “USDA Choice,” which has more fat and is more expensive, and “USDA Prime,” which has the most fat of the three grades, is the most expensive and the most tender. The change was advocated by consumer and health groups.
