Oklahoma Oatmeal Pie Is a Slice of Paradise and a Delicious Addition to All Holiday Seasons

“Our friend Charlene always talked about her mom’s wonderful oatmeal pie,” writes Kat and Steph Rodosevich. “It never seemed so wonderful to me until Charlene brought one to our Thanksgiving dinner. Now the holidays wouldn’t seem complete without this delicious addition. Charlene likes her pie with vanilla ice cream and we prefer our slices piled high with real whipped cream and a sprinkle of nutmeg.

OKLAHOMA OATMEAL PIE

3 eggs

1 1/2 cups sugar

1 1/8 cups light corn syrup

1 cup plus 2 tablespoons oats

Dash salt

3/4 cup milk or whipping cream

6 tablespoons butter, melted

1 1/2 cups shredded coconut

1 1/2 tablespoons vanilla

1 unbaked (10-inch) deep-dish pastry shell

Beat eggs lightly in large bowl. Add sugar, corn syrup, oats, salt, milk, melted butter, coconut and vanilla. Mix well. Pour into pie shell. Bake at 350 degrees 45 to 55 minutes or until nicely browned and set. Makes 8 to 10 servings.
