Improvised Applesauce Cake Proves as Good as One ‘From Scratch’

“One rainy morning I decided to bake an applesauce cake for my family, but was disappointed to find that I did not have enough flour in my cupboard to make the cake ‘from scratch.’ Instead I found a box of yellow cake mix in the back of a shelf and experimented with it. The family loved the results and it has become a special occasion favorite.”

BUSY DAY APPLESAUCE CAKE

1 (18.25-ounce) package yellow cake mix

1 cup applesauce

1/3 cup oil

3 eggs

1 1/4 teaspoons ground cinnamon

Ground nutmeg

1/2 teaspoon ground cloves

Glaze

In large mixing bowl, combine cake mix, applesauce, oil, eggs, cinnamon, 3/4 teaspoon nutmeg and cloves. Mix at low speed of electric mixer until moist, then at high speed 2 minutes. Pour mixture into greased and floured bundt pan.

Bake at 350 degrees 50 minutes or until wood pick placed in center comes out clean. Cool in pan 15 minutes. Invert onto serving plate and cool. Drizzle Glaze over top of cake. Sprinkle lightly with nutmeg. Makes 12 servings.

Glaze

1 cup sifted powdered sugar

1/4 teaspoon rum extract

1 teaspoon light corn syrup

2 to 3 tablespoons applesauce

Combine powdered sugar, rum extract, corn syrup and applesauce in mixing bowl. Mix until smooth and of drizzling consistency.
