Salmon Dish For One Is Quick, Easy

When dining alone, you want something satisfying but simple to prepare that doesn’t sacrifice nutrition. Too often, people who live alone don’t bother to cook just for themselves and as a result, their health suffers. With Salmon Divan, convenience is coupled with nutrition.

This one-dish meal is a flavorful combination of canned salmon, chicken bouillon, Parmesan cheese and milk arranged atop a bed of cooked asparagus or broccoli spears. A simple dish like this is perfect after a long day at the office or after fighting crowds at the local department store. Toast points and salad complete this appetizing meal for one.

Drain 1 (3 3/4-ounce) can salmon, reserving liquid and break into chunks with fork. Melt 1 tablespoon butter or margarine and blend in 1 tablespoon flour and 1/2 teaspoon chicken bouillon base. Add reserved salmon liquid, 1/2 cup milk, dash salt and dash black pepper and cook, stirring constantly, until thickened and smooth.

Blend in 1 tablespoon Parmesan cheese and 2 teaspoons Sherry. Arrange cooked asparagus or broccoli spears in small shallow baking dish and top with salmon and cream sauce. Bake at 350 degrees 15 minutes. Makes 1 serving.
