BEAN BAGS: The Segerstrom lima bean operation in Costa Mesa and Santa Ana is the last in the state to use an old-fashioned sack machine for part of its harvest. Two farmhands sit on the back of the machine in the fields and sew the tops of 100-pound bags that are filled every 28 seconds.
