Pavilions markets have carried frozen ground buffalo meat for about two years. Now (using the slogan “Have You Herd?”) they’re adding frozen buffalo steak, sold in packs of two 8- to 10-ounce ribeyes. The meat comes from Star B Ranch in Ramona, Calif.

Buffalo tastes almost exactly like beef, though perhaps a little sweeter. The big attraction--that is, apart from the thrill of the whole idea of eating buffalo--is that the meat isn’t marbled with fat, so it contains 25% to 30% fewer calories than beef.

You have to remember that very lean meat is relatively dry and should be cooked at lower temperatures than marbled meat. Let your barbecue coals die down a little before whomping any buffalo on the grill. The steaks are $10.95 a pound.
