Flat Bread Rising

We could blame it on the Fajita Pita. Once Jack in the Box decided to take its fast food out of the bun and put it into a pita, flat bread mania was just a matter of time.

Of course, we’ve been eating flat breads all along. Tortillas are the breads that built more than one Mexican food empire. And pizza is, for many, the ultimate flat bread. But this current wave of flat bread fever has yet to be fully played out.

There is, for instance, no flat bread standard. The Daily Grill chain recently put flat breads on its menu; you get a crisp, tortilla-thin crust topped pizza-style with, say, chopped tomatoes and herbs. At selected Sizzler locations--where outdoor banners proclaim the arrival of flat bread sandwiches--the flat breads are thicker, more pita-like, and function as a large wrapper for Caesar salad chicken or Texas-style barbecued beef. One thing is certain, they never ate flat breads like these in Uzbekistan.
