Injera is a sort of pizza-sized sourdough crepe cooked on one side only, which leaves it spongy and flexible. In Ethiopia, you tear off a piece of injera and use it instead of a fork or spoon to pick up your food. Because of its fabric-like texture, it’s much better for the job than a tortilla. Injera can be made from any grain, but the best is an almost microscopically small Ethiopian grain called tef.

Making injera takes experience. Fortunately, Merkato Market sells fresh-made injeras wrapped in plastic.
