With his grilled steak with spicy guajillo sauce, Rick Bayless offers three specific wine recommendations:

*1995 Nalle Winery Zinfandel “Dry Creek Valley.” Bayless says: “This is probably one of the easiest-drinking Zins ever. It’s got a nice black pepper spiciness that goes well with chile sauces and some very lovely dark fruit, but everything is in very elegant balance. It doesn’t scream of one particular thing. It’s balanced in a very respectful Zin way.”

*1995 Eberle Winery Syrah “Steinbeck Vineyard” or “Paso Robles.” “These Syrahs have a real mouthwatering quality to them. I think of black raspberries and plums, but they have good acidity too.”

*1989 Conde de Valdemar Tempranillo. “This is a little different. Instead of fresh fruit, it offers a lot of developed flavor because it is an older wine.”
