In the last decade, restaurants have been crazy for Tall Food. Now it’s coming to the home. This spring, food stylist Deborah Fabricant will publish “Stacks, the Art of Vertical Food.” And throughout this month, Foster Farms is previewing some of her recipes in specially marked packages of Savory Servings chicken breasts.
Tallifying food largely consists of baking layers of stuff in a mold called the Stack. Foster Farms has actually copyrighted the word “Stack,” but it acknowledges that an empty soup can, though somewhat less glamorous, works perfectly well. Anyway, the chicken company will give you two Stacks free with three Savory Servings proofs of purchase. And then you can get tall in style.
