When we whipped up a batch of pancakes from Bruce’s Sweet Potato Pancake Mix, we were amazed at how light and fluffy they were. The flavor was slightly sweet with a touch of cinnamon. One taster said they would be great with maple syrup and toasted pecans. The mix can also be used to make sweet potato waffles, muffins and cookies. One bag will make 24 4-inch pancakes.
