The Green Stuff

Guelaguetza’s mole verde is as green as you would expect (verde meaning “green” in Spanish). The color comes from three herbs: parsley, hierba santa (acuyo) and epazote. Although the menu says green chiles are added, that is not the case. Thickened with corn masa, this Oaxacan mole is mild enough for the most delicate palate. You can have it with either pork or chicken. It also contains big chunks of russet potato.
