This month Colman Andrews becomes the second person to head Saveur magazine, replacing Newsweek-bound Dorothy Kalins as editor in chief. Kalins, 57, shaped Saveur as a high-concept glossy that connects fine foods with their humble origins.

“Our feeling was, food was sort of floating around in restaurants but it didn’t come from anyplace,” Kalins said last week as she wrapped up her tenure at the magazine she created seven years ago. “It didn’t come from the history or the ritual of the place, or from the way these ingredients have always been treated. If you’re using rosemary with lamb, maybe there’s a reason for that: because lambs grazed on hillsides where rosemary grew.”

Saveur, with a circulation approaching 400,000, seemed imperiled in recent years as management worked to build advertising and find a buyer for the independent magazine. Last year, Florida’s World Publications-owner of such magazines as WaterSki and Sport Fishing-bought Saveur and sister publication Garden Design, which Kalins also ran.

Andrews, 56, helped Kalins develop the Saveur concept and served as her No. 2 editor, so he said readers shouldn’t expect many changes. “The joke around Saveur is, we’re not interested in the latest hot young chef,” he said. “We’re interested in his grandmother.”
