* Imagine a mozzarella enriched with cream, locally made and so fresh it falls apart when you cut it.

Antonello: Chef Franco Barone wraps burrata and pesto with salmon, molds it into a tiny cake and serves it on yellow tomato salad. And his arancini (fried balls of rice mixed with tomato, onions and Parmesan) are stuffed with burrata, served with garlicky tomato sauce.
