Now Serving ‘Happy Cow’?

Let me see if I have this right: Rancher Bill Niman believes giving cows plenty of TLC results in tastier beef (“The Guru of Happy Cows,” by Martin Booe, Entertaining, Nov. 17). Accordingly, ranch hands are required to “walk cattle individually to the slaughterhouse, to calm them” because “you can’t separate an animal’s psychological health from its physical health.” And just what does killing an animal do to its psychological and physical health? Am I the only person who sees the hypocrisy?
