Beer goes with everything

As a chef, I abhor food snobs and wine snobs. Food and drink can be fully appreciated without the obnoxious effete posturing. However, as someone who was born and raised in Belgium, I was gobsmacked by the letter [Feedback, Aug. 23] from Doug Allen of Claremont. No, Doug, you’re wrong, beer is not just for “brat or dogs.”

There’s a strong golden ale that’s best with brie; a coriander- and orange peel-flavored white beer that’s perfect with pears; a Trappist ale that’s just right with rabbit and a spontaneously fermented beer infused with sour cherries that’s fabulous with ice cream. To mention just a few. Carpe cerevisi!
