The Silver Lining comes from the Tar Pit, Mark Peel and Jay Perrin's elegant Art Deco house of delicate small plates and crafty cocktails. Besides being Peel's wife's favorite libation at the moment, it's a breezy mouthful of tingly citrus and airy egg white with a pleasing measure of warming rye.
1½ oz Old Overholt
¾ oz lemon juice
¾ oz Licor 43
Dry whip all ingredients but club soda to emulsify the egg white. Add ice and shake to chill, strain into a fizz glass and top with club soda. Serve without garnish.
