Everyone else might be busy watching Cheddar Vision, the live broadcast of aging cheddar from Westcombe, England, but I can’t stop thinking about the Beemster I recently ate from the cheese cart at Providence.

It was perfectly delicious, with the amazing crystalline texture of a great aged Dutch cheese (crumbly like Parmigiano-Reggiano or Grana Padano), a little sharp and nutty and caramelly.
