Institute for French Cuisine Proposed

Culture Minister Jack Lang announced a proposal Sunday to establish France’s first national institute of cuisine, devoted to promoting and safeguarding the art and techniques of French cooking.

“I am convinced that this center is a vital necessity” because “it is desirable in a society which intends to preserve its civilization,” the minister said.

Lang did not say if the proposal had been approved by the government.

The plan, published in the newspaper Journal du Dimanche, includes a cooking school on the postgraduate level with such noted French chefs as Paul Bocuse, Alain Senderens, Pierre Troisgros and Joel Robuchon giving lessons.

Fifty restaurants involved with the institute could present French and foreign cuisine, according to the plan drawn up for Lang by Jean Ferniot, editor of the magazine Cuisine et Vins de France.
