Calzone Is a Tasty Pizza Alternative

Calzone--the “turnover” version of pizza--can be filled with a wide variety of ingredients. The golden yeast crust of Salmon Calzone envelops layers of canned salmon, herb-seasoned tomato sauce, olives, mozzarella and Parmesan cheese.
Served with a crisp green salad, this makes a delicious meal for family or casual entertaining.
SALMON CALZONE
1 large onion, chopped
3 tablespoons oil
1 (8-ounce) can tomato sauce
1 teaspoon basil leaves, crushed
1 teaspoon oregano leaves, crushed
Pizza Yeast Dough
6 to 8 ounces sliced mozzarella cheese
1 (7 3/4-ounce) can salmon, drained and flaked
1/4 cup sliced ripe olives
1 hard-cooked egg, sliced, optional
2 tablespoons grated Parmesan cheese
Saute onion in oil until tender. Add tomato sauce, basil and oregano. Cook over medium heat 5 minutes.
Roll out Pizza Yeast Dough on floured surface to make 15-inch circle. Fold in half, place on jellyroll pan and unfold. Spoon tomato sauce over dough half in pan. Layer mozzarella cheese, salmon, olives, egg and Parmesan cheese over sauce.
Fold dough over filling to make 1/2 circle. Press edges to seal. Bake at 400 degrees 20 to 25 minutes or until golden brown. Makes 4 servings.
Pizza Yeast Dough
1 package dry yeast
1/3 cup warm water (105 to 115 degrees)
1 egg
1 tablespoon oil
1 teaspoon sugar
1/2 teaspoon salt
1 3/4 cups flour, about
Sprinkle yeast over warm water. Stir to dissolve. Let stand 5 minutes.
Combine egg, oil, sugar and salt. Stir into yeast mixture. Gradually work in flour. Knead until smooth and elastic.
