Sweet-tooth Success

“O ne day, in order to satisfy a sweet tooth urge, I perused my cookbook collection to discover I didn’t have enough ingredients on hand to make any of the recipes listed,” Becki Ransom Gimarse writes. “Determined to satisfy this urge, I made up the following recipe using bits of ingredients listed and my cupboard stock. The result has been a success. Everyone who tries the cookies requests the secret recipe. I’m sure your readers will enjoy them as well.”

BECKI’S PEANUT BUTTER CRISPY BARS

1 cup butter, softened

1 cup brown sugar, packed

2 teaspoons vanilla

1/2 teaspoon salt

2 cups flour

1/2 teaspoon baking soda

1/2 (6-ounce) package peanut butter chips

1 cup chopped walnuts

Cream butter and sugar until light and fluffy. Add vanilla and salt and mix well. Combine flour and baking soda. Fold into creamed mixture.

Press mixture into greased 15x10-inch baking pan. Bake at 350 degrees 20 to 25 minutes. Remove from oven and sprinkle peanut butter chips over. Return to oven 2 minutes to soften chips. With spoon or knife, spread chips over baked crust evenly. Sprinkle with walnuts. Cut into bars. Makes 48 bars.
