Jennifer’s Apple and Blueberry Pancakes Are Hot Off Griddle

JENNIFER’S APPLE AND BLUEBERRY PANCAKES

1/2 green apple

1 1/2 teaspoons cinnamon sugar (or 1 1/4 teaspoons sugar mixed with 1/4 teaspoon cinnamon)

1 cup blueberries, fresh or frozen

Sugar

2 cups buttermilk baking mix

2 eggs

1 cup milk

Butter and/or fruit syrup

Peel and chop apple into small chunks. Place in small bowl and cover with water. Drain well. Combine apple with cinnamon sugar, stirring to coat. Rinse blueberries and drain on paper towels. Sprinkle with a little sugar.

Combine baking mix, eggs and milk. Mix slightly, until just blended, but still lumpy. Fold in blueberries and cinnamon-apple mixture. Pour about 3 tablespoons batter onto lightly greased hot griddle (or spray griddle with non-stick spray) and cook until pancakes are puffed and dry around edges. Turn and cook other sides until golden brown. Serve with butter and/or fruit syrup. Makes about 10 pancakes.
