Thanksgiving Timesaver : Try Sauteed, Sliced Turkey for a Quick, Elegant Holiday Meal

Roasting a whole bird isn’t the only way to serve turkey on Thanksgiving. Enjoy the flavor of this traditional entree with turkey breast slices, sauteed in oil and butter and sauced with white wine, onions, mustard and green peppercorns.

Select pre-cut turkey breast slices or slice them yourself from a whole or half turkey breast. They cook quickly and result in an entree that’s elegant enough for a formal holiday meal. Accompany with potatoes, carrots and warm rolls.

TURKEY SLICES WITH GREEN PEPPERCORN SAUCE

1 1/4 pounds turkey breast slices

Salt, pepper

2 tablespoons oil

2 tablespoons butter or margarine

1 cup dry white wine

3 green onions, minced

1 tablespoon Dijon mustard

1 tablespoon green peppercorns

Season turkey breast slices with salt and pepper. Heat oil and butter in skillet and saute slices 2 minutes on each side. Remove and keep warm.

Simmer wine, green onions, mustard and peppercorns in same skillet 5 minutes. Serve over turkey slices. Makes 6 servings.
