A Delayed Debut
Thank you for Laurie Ochoa’s revealing article about the long and difficult process of opening a new restaurant (“The Birth of Two Restaurants: The Agony and the Economics,” Aug. 27).
After nearly a year of delays, of dealing with city officials who don’t know local laws, of contractors who are paid and never show up, and home-owner associations that make getting a liquor license a nightmare, I have ordered a T-shirt to answer the question I hear most often. My shirt reads: “Please don’t ask me when my restaurant is going to open!”
