Chocolate Cheesecake, Sesame Chicken Wings

DEAR SOS: If you can dig up the recipe for chocolate cheesecake from Old World Restaurant, I will be forever grateful.

DEAR JEAN: Here’s the recipe without too much digging. Old World complied graciously.

OLD WORLD CHOCOLATE CHEESECAKE

32 ounces or 4 (8-ounce) packages cream cheese, softened

1 1/2 cups sugar

6 eggs

1 teaspoon vanilla

1/8 teaspoon ground cinnamon

1/2 cup half and half

6 (1-ounce) squares unsweetened chocolate

2 teaspoons butter

Graham Cracker Crust

Chocolate Sour Cream Topping

Combine cream cheese, sugar and eggs in mixer bowl. Beat until smooth. Add vanilla, cinnamon and half and half. Melt chocolate with butter in saucepan and add to cheese mixture. Beat until well blended. Pour into Graham Cracker Crust.

Bake at 350 degrees 45 to 55 minutes. Remove from oven and cool on rack.

Spread Sour Cream Topping on top of cooled cake. Bake at 350 degrees 15 minutes. Let stand 3 to 4 hours in refrigerator before serving. Makes about 12 servings.

Graham Cracker Crust

1 1/2 cups crushed graham crackers

6 tablespoons butter, melted

1/8 cup sugar

1/8 teaspoon ground cinnamon

1/2 teaspoon vanilla

Combine cracker crumbs and melted butter in bowl. Mix well. Add sugar, cinnamon and vanilla and mix well. Press onto bottom and about halfway upsides of buttered 10-inch springform pan.

Sour Cream Topping

1 (1-ounce) square semisweet chocolate

3 cups sour cream

1 cup powdered sugar

1/2 teaspoon vanilla

Melt chocolate over hot water or microwave oven. Cool slightly. Stir into sour cream. Stir in powdered sugar and vanilla until smooth.

DEAR SOS: I’ve been searching for a wonderful recipe for sesame seed chicken wings using green onions, soy sauce and cornstarch, among other ingredients. Can you help?

SESAME SEED CHICKEN WINGS

1/2 cup cornstarch

1/4 cup flour

1/4 cup sugar

1 1/2 teaspoons salt

5 tablespoons soy sauce

2 eggs

2 green onions, sliced

2 cloves garlic, minced

2 tablespoons sesame seeds

Oil

3 pounds chicken wings

Combine cornstarch, flour, sug ar, salt, soy sauce, eggs, green onions, garlic and sesame seeds in bowl. Stir in 1/4 cup oil.

Remove wing tips from chicken and discard. Break at joint and loosen meat from 1 joint end. Place chicken pieces in mixture and marinate at least 2 hours, turning occasionally. Overnight marinating will provide better flavor. Drain wings.

Heat enough oil for deep frying to 350 degrees and fry chicken, few pieces at a time, until golden brown. Makes 6 servings.
