Don and Julie Harper, whose Whistling Wings Farm in Biddeford, Me., is just down the road from President Bush’s summer home in Kennebunkport, began selling raspberry jam in 1977. Don’s mother, Ruth, began by whipping it up in their kitchen, using berries picked at peak season. Because only raspberries and a tiny amount of sugar are used (no corn syrup, preservatives or fruit-juice concentrates), the jam has an extraordinary intensity of flavor. The low sugar content makes the jam slightly runny. It also makes it low calorie--a teaspoon has only 7 1/2 calories.
