Cheese-Chive Biscuits, Oatmeal Cookies

DEAR SOS: The Beef Barron Restaurant at the Flamingo Hilton Hotel in Laughlin, Nev., serves the most delicious cheese-and-chive biscuits I have ever eaten. Any possibility of getting the recipe? I’m sure your readers would enjoy them too.

DEAR CELIA: The biscuits are served with entrees at the restaurant, and more than a few readers have requested the recipe.

CHEESE-CHIVE BISCUITS

1/4 cup oil

1 cup buttermilk

1 cup grated Cheddar cheese

1/4 cup sliced green onions or chives

1 1/2 cups cake flour

1/2 cup bread flour

1 teaspoon salt

1 tablespoon sugar

1 tablespoon baking powder

1 teaspoon ground black pepper

1 teaspoon garlic power

Combine oil and buttermilk in large mixing bowl. Add cheese and green onions. Combine cake and bread flours, salt, sugar, baking powder, pepper and garlic powder in separate bowl. Gradually add to liquid ingredients, folding in until batter is well incorporated but not overmixed.

On floured board, roll dough out to 1- to 1 1/4-inch thickness. Cut into desired shapes, such as rounds or squares. Place on baking sheets, or place in greased cupcake tins for individual biscuits. Bake at 300 degrees 10 to 15 minutes or until slightly browned. Do not over-bake. Makes 1 dozen biscuits.

Each biscuit contains about:

WALT DISNEY’S OATMEAL COOKIES

2 cups flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon baking powder

3/4 teaspoon ground cinnamon

1 1/3 cups butter

1 1/4 cups granulated sugar

3/4 cup brown sugar, packed

2 large eggs

2 tablespoons water

1/2 teaspoon vanilla

2 1/2 cups uncooked rolled oats (not instant)

1 1/4 cups raisins

Combine flour, salt, baking soda, baking powder and cinnamon in medium bowl. Set aside.

Cream butter in very large bowl. Beat in granulated and brown sugars. Beat in eggs, 1 at time. Add water and vanilla. Mix until well blended, about 4 minutes.

Mix oats, raisins and flour mixture into sugar mixture. Stir until thoroughly blended. Drop by large tablespoons onto ungreased baking sheet. Bake at 350 degrees 9 to 14 minutes, or until light-brown in color. Cool on baking sheet before removing from pan. Makes 4 dozen.

Each cookie contains about:

128 calories; 90 mg sodium; 23 mg cholesterol; 6 grams fat; 18 grams carbohydrates; 2 grams protein; 0.12 grams fiber.
