DEAR SOS: I had the most wonderful brownie while attending a performance of “Don Giovanni” at the Music Center in Los Angeles. Would it be possible to obtain the recipe?

DEAR WENDY: The people at Spotlight Cafe, the Music Center kiosk where the brownies are sold, sent us this recipe from Restaurant Associates, their affiliate. We’ve enjoyed the brownies too.

Spotlight Cafe Brownies

Active Work Time: 15 minutes * Total Preparation Time: 1 hour 10 minutes

10 tablespoons butter, plus more for greasing

4 ounces unsweetened chocolate

5 ounces semisweet chocolate

1 1/2 teaspoons vanilla extract

6 eggs

2 cups sugar

1 1/3 cups flour

1/2 teaspoon salt

4 ounces semisweet chocolate chips

* Combine butter, unsweetened chocolate and semisweet chocolate in top of double boiler set over, but not touching, simmering water. Stir mixture constantly until thoroughly melted and smooth, 5 minutes. Set aside.

* Beat together vanilla, eggs and sugar on medium speed until fluffy, about 10 minutes.

* Gradually beat in flour and salt until pale in color, about 10 minutes. Add chocolate-butter mixture and beat until well blended, 1 to 2 minutes.

* Stir in chocolate chips.

* Pour batter into greased 13x9-inch baking pan, spreading evenly. Bake at 350 degrees until skewer comes out clean when inserted in center, about 35 minutes. Rotate pan halfway through baking.

16 brownies. Each brownie: 342 calories; 173 mg sodium; 99 mg cholesterol; 20 grams fat; 41 grams carbohydrates; 5 grams protein; 0.47 gram fiber.
