I have a 17-month-old daughter, and I’m pregnant with my son, due in December. I don’t have the time or energy to spend on dinner some nights. One of my favorite delicious meals to throw together is chicken and avocado wraps. I purchase frozen, precooked seasoned chicken strips and heat them in a little olive oil for 10 minutes. While the chicken is heating, I wrap tortillas in foil and heat them at 350 degrees for 10 minutes. I also put on water to boil for tea. Then I slice and chop my on-hand ingredients--lettuce, tomato, red onion and a ripe avocado. I season the sliced avocado with lime juice and garlic salt. I add a dash of Worcestershire sauce to the chicken, then quickly put it all together in the tortillas with a tablespoon of Caesar dressing in each. Serve with tea.
