Savannah Chop House: Chef Chris Reichel uses prime beef butchered on the premises. His 12-ounce New York is cooked on the griddle and topped with melted butter. 555 East: Chef Shelly Bojorquez uses prime Angus beef aged at 28 days. At lunch, you can get an 8-ounce New York steak high-heat broiled or sauteed in peppercorn sauce. At dinner, the steaks are 16 ounces, and there are two additional preparations, pan-charred (“black and blue”) and blackened with Cajun spices. Arroyo Chop House: In this elegantly refurbished old trolley station, the 16-ounce prime New York steak (corn-fed) is broiled at high heat to give it a crust. Morton’s: At this venerable L.A. power spot, chef David Slatkin uses prime beef aged 28 days, marinated in South African black pepper and Spanish olive oil.
