Kid Chocolate

If 23-year-old Jonathan Grahm--the new owner of Compartes in Brentwood--had his way, he’d banish boring, red foil-wrapped chocolates forever. The Willy Wonka wannabe recently purchased the treats institution from his father and grandmother, meaning cocoa fiends can now find hipped-up flavors using fresh ingredients and unexpected combinations melding savory with sweet. “I’d like to make the brand reflect my interest in arts and fashion,” says Grahm, who cites his mom as his No. 1 influence. Below, he unveils five holiday truffle creations, available through the end of the month. Compartes, (310) 826-3380.

OLIVE OIL AND FLEUR DE SEL

“You get the crunch of the salt and then the olive essence, which almost makes it tart.”

BROWNED BUTTER AND SAGE

“The sage is a wintry flavor that reminds people of Christmas trees and evergreens.”

ORGANIC VERMONT MAPLE SYRUP

“I was waiting for winter to come along just so I could use this beautiful antler print.” (inset photo)

CINNAMON LATTE

“Lots of organic cream and butter in this one.”

APPLE PIE

“It’s made with finely ground crust. Tastes just like an apple pie you’d get at Apple Pan.”
