Making his Vegas debut with a bang, Chicago chef extraordinaire Matthias Merges brings us Yusho, a wildly imaginative grill and noodle house that serves up Japanese street food with a kick. Think fresh seafood, poultry, meats and vegetables cooked to order over a chattering fire, accompanied by house-made pickled vegetables, noodles and steamed buns. Try Merges’ famous ramen (crispy pork shoulder croquette, poached egg, nori and cucumber) and yakitori-like octopus charred over an open flame.
