Twitter #Weekendeats highlights: Kale and sweet potato recipes for #MeatlessMonday

Monday may be the least-loved day of the week, but at least it brings some Twitter #MeatlessMonday fun. Kale and sweet potatoes are just a few of the vegetable stars that were shared during Monday morning’s #Weekendeats chat on Twitter. Here are the highlights:
Susan Orlins highlighted kale with five recipes including kale chips, sauteed kale, kale sandwiches, kale lasagna and a green smoothie. Jessica Chirstensen from City Tavern in Culver City also kept things green with a whole lot of guacamole.
Shulie Madnick from the blog FoodWanderings.com made some oven-baked sweet potato fries, and JFranziska on Twitter shared a photo of her roasted sweet potato and figs.

Rebecca O’Brien shared a picture of her spicy Thai lentil soup with a salad; Sarah Simmis, also known as LaFemmeEpicure, shared a photo of her spring crudites and hummus; and the Adirondack Chick shared a photo of a monster veggie burger and a recipe for her summer pasta salad.
