Here’s one class you won’t want to cut: Food University is scheduled for next month at Caesars Palace in Las Vegas, and the list of faculty reads like a who’s who of culinary experts.

The goal of the March 27-29 class is to turn foodies who are average cooks into superior home chefs.

Nine hands-on cooking classes will be taught by well-known chefs, and students will also attend three seminars (one is all about chocolate) and take a couple of behind-the-scenes field trips.

Tuition is $1,995 per person.

Restaurateur Bradford Thompson, a New York-based, James Beard Award-winning chef, will serve as culinary director. His faculty will include:

  • Duff Goldman, star of Food Network’s “Ace of Cakes” and owner of Charm City Cakes in Los Angeles and Baltimore, will lead a cake-decorating class.
  • Frank Pellegrino Jr., proprietor of the Rao’s restaurants in Las Vegas and New York, will teach students how to prepare classic Italian dishes.
  • Laura Werlin, one of the country’s top authorities on cheese, will educate participants on incorporating cheeses into dishes.

Three breakfasts and three lunches are included, as is a graduation ceremony at which participants will receive their “Enlightened Palate” diplomas.

Special lodging rates are offered at Caesars Palace.
