A year after closing restaurant, chef pops up ... where?

Chef moves where? Readers will sometimes write in about a restaurant that’s been gone for 10 or more years, wondering what happened. Maybe they don’t get out much, but even frequent restaurant-goers can get so distracted with all the new places opening that they miss the quiet slipping away of an old favorite.

For anybody wondering what happened to French chef Jean-François Meteigner when he closed up La Cachette Bistro in Santa Monica in late 2011, the L’Orangerie alum is now cooking in — Vietnam!

He’s executive chef at the soon-to-open MGM Grand Ho Tram Beach Resort’s 100-seat An Nam French Bistro. Meteigner has his sights set on creating 100 French-Vietnamese dishes for the new restaurant.

The luxury hotel opens early this year with 541 guest rooms and nine restaurants and is being pegged as having “the excitement of Las Vegas, the beauty of Vietnam.”

The resort’s executive chef, in charge of supervising all those kitchens, is someone familiar, too. He’s Conny Andersson, who opened AK Restaurant + Bar in Venice in 2008 at the site that is now the Tasting Kitchen. He is also the former executive chef of The BLVD at the Beverly Wilshire Hotel.
