Got leftover hard-boiled eggs? Then you’re in for a post-Easter treat

It’s the day after Easter. There’s a bowl of hard-boiled eggs in the fridge. So whatcha gonna do with all those leftovers? If your recipe for egg salad goes something like chopped eggs plus mayo on white bread, then try this recipe from the L.A. Times Test Kitchen for a tangy twist on an old favorite. It would be great as a brown-bag lunch, or a quick and easy dinner. (Or both, depending upon how many eggs you colored.)

Take those chopped eggs and mayo and mix in mustard and vinegar -- I know! Weird! -- plus diced green onions and celery. Add some dill, lettuce, black pepper and, here’s the kicker: olive bread.
