Martha Stewart’s Pies and Tarts, by Martha Stewart (Clarkson N. Potter: $18.95, 216 pp., illustrated.)

Stewart’s book on desserts is, like “Chez Panisse Desserts,” classified according to fruit, vegetables and chocolate, but what a slick, picture-beautiful book it is. It definitely matches Stewart’s other tour de force publications, which somehow plunged an unknown caterer from Westport, Conn., into center stage of the food publishing world overnight.

However fascinating the recipes (red and white pear tart, blackberry heart tart, persimmon tartlets, beet pie, sweet spinach pie, spicy butternut squash pie, sugar pumpkin molasses pie, ginger-pecan tart, fudge tart with creme Anglaise and orange sauce), the yummy presentations of them are what make the book. Good going, Martha Stewart.
