Spinach, Turkey Add Nutrition to Meat Loaf Recipe

DEAR SOS: Please ask Barbara Jacobs, owner of Fresh To Go, in Venice, Calif., to part with her recipe for her meat loaf, which is delicious and light. I think many readers, especially my family, would love it.

DEAR CHRISTINA: No fresh ones pulled here. Jacobs was delighted to part with her nutritious recipe, which is loaded with spinach, carrots, onions and guess what--ground turkey.

FRESH’S TURKEY-SPINACH MEAT LOAF

1 pound ground turkey

1/2 pound chopped spinach leaves

1/2 cup chopped fresh basil

1/2 cup grated carrots

1/2 cup chopped onion

3 medium eggs

1/2 cup tomato puree

1/2 cup unseasoned bread crumbs (wheat germ may be substituted)

1/2 teaspoon salt

1 teaspoon black pepper

Mix turkey, spinach, basil, carrots, onion, eggs and tomato puree, being careful not to over-mix. Add bread crumbs gradually, then salt and pepper. Mix well.

Spray 8x4-inch loaf pan or mold with vegetable spray and gently spoon meat into pan. Do not pack too densely. Bake at 375 degrees 40 to 50 minutes or until internal temperature reaches 140 degrees on meat thermometer. Cool, then remove from pan or unmold. Slice to serve. Makes 8 servings.

DEAR SOS: Some years ago you printed a recipe for the Coconut Macaroon Pie from Hollander Cafeteria in Glendale. I have misplaced my copy and would love another.

COCONUT MACAROON PIE

2 eggs

1 1/2 cups sugar

1/2 cup water

1/4 cup flour

1 teaspoon almond extract

1/4 teaspoon salt

1 1/3 cups shredded coconut

1/2 cup butter or margarine, melted

1 unbaked 9-inch pie shell

Lightly beat eggs in mixing bowl. Beat in sugar, water, flour, almond extract and salt until blended. Stir in coconut and melted butter. Pour into pie shell. Bake at 350 degrees 45 minutes. Let cool to warm. Makes 1 (9-inch) pie.

DEAR MRS. R.S.D.Y.: Because the actual recipe for Orange Julius is unattainable, we developed our own version some years back. It’s close.

ORANGE JULIANA

1 cup orange juice

1 cup crushed ice

2 tablespoons nonfat dry milk

1 egg white

Combine orange juice, ice, nonfat milk and egg white in blender container and blend until frothy. Pour into tall, chilled glass. Makes 1 serving.
