Something for a Deserving Dad : Orange Cream Chicken Is Truly Special for Father’s Day
Orange Cream Chicken is a wonderfully hearty chicken entree that is ideal to serve Dad this Sunday for Father’s Day.
It features a delicately flavored orange cream sauce spooned over succulent sauteed boneless chicken thighs. This special dish is reminiscent of a French countryside repast. Serve with wild rice and a fresh green salad.
ORANGE CREAM CHICKEN
1 pound boneless chicken thighs
1 tablespoon butter or margarine
1 medium onion, thinly sliced
1 1/2 teaspoons rosemary
1 cup orange juice
1/2 cup whipping cream
Salt, pepper
Brown thighs in butter. Add onion, rosemary and orange juice. Cover, reduce heat and simmer 20 minutes. Remove chicken to platter and keep warm.
Bring braising liquid to boil. Stir in cream. Simmer, uncovered, until sauce thickens slightly, 10 to 15 minutes. Season to taste with salt and pepper. Pour over chicken to serve. Makes 3 to 4 servings.
