LIGHT STYLE : A Salad With Stripes

Colorful gelatin salads are great to serve with turkey or lean ham on holiday buffets. You can build an especially low-calorie salad (only 61 calories per serving) by using low-sugar gelatins, low-calorie cheese and low-fat or nonfat dairy products. Regular gelatin is slightly higher in calories and carbohydrates.

HOLIDAY SALAD

2 (5/8-ounce) packages low-calorie strawberry gelatin

1 quart boiling water

1 basket strawberries, hulled and sliced or 1 (10-ounce) package frozen unsweetened strawberries, thawed

1 (20-ounce) can unsweetened pineapple chunks, drained

1 cup low-calorie cream cheese

1 cup low-fat strawberry or vanilla yogurt

1 cup low-calorie whipped topping

Dissolve gelatin in boiling water. Chill until syrupy. Fold in strawberries and pineapple. Pour half of mixture into 1 1/2-quart mold and chill until just firm. Spread cream cheese over set gelatin, then spread strawberry yogurt over cream cheese. Pour remaining gelatin mixture over yogurt. Chill at least 24 hours. Unmold onto serving plate. Serve with whipped topping. Makes 12 servings.

Each 1/2-cup serving low-sugar strawberry gelatin with topping contains about:

61 calories; 64 mg sodium; 5 mg cholesterol; 1 grams fat; 6 grams carbohydrate; 5 grams protein; 1 gram fiber; 15% calories from fat.

Exchanges: 1 fruit, 1/4 milk.

With regular strawberry gelatin, each 1/2-cup serving contains about:

84 calories; 64 mg sodium; 5 mg cholesterol; 1 gram fat; 13 grams carbohydrate; 5 grams protein; 1 gram fiber; 15% calories from fat.
