DEAR SOS: Could you obtain the recipe for corkscrew pasta with chicken and sun-dried tomatoes from the chef at the Pavilion at the Four Seasons Hotel in Newport Beach? It’s wonderful--and low in fat.

DEAR LYNNE: The recipe arrived with dispatch. Any curlicue or small tubular-type pasta may be substituted for fusilli (corkscrew pasta). Sun-dried tomatoes packed in jars are available at most Italian grocery or gourmet food stores.

FOUR SEASONS PASTA WITH GRILLED CHICKEN AND DRIED TOMATOES

1 tablespoon minced garlic

2 tablespoons minced shallots

1 tablespoon olive oil

1 cup thinly sliced carrots

1/2 cup diced sun-dried tomatoes

6 chicken breasts, grilled and cut julienne

2 pounds fusilli or other-shape tubular pasta, cooked and drained

1 cup chicken stock

2 tablespoons mixed chopped herbs, parsley, thyme and rosemary

2 tablespoons minced basil

Salt, pepper

1 tablespoon butter

In skillet saute garlic and shallots in olive oil until shallots are tender. Add carrots, tomatoes, chicken, pasta and chicken stock. Heat through. Add herbs, basil and salt and pepper to taste. Toss to mix well. Add butter and let melt. Toss.

Makes 8 servings.

DEAR SOS: In a most unlikely location in Covina, Calif., there is an extraordinary Italian restaurant called Tulipano where they serve bruschetta, an appetizer. I wonder if you can obtain the recipe?

DEAR DIANE: Here’s the recipe from the restaurant. It makes a great, inexpensive topping for toast appetizers to pass with cocktails at party time.

TULIPANO’S BRUSCHETTA

6 to 8 plum tomatoes, diced

5 fresh basil leaves, chopped

5 cloves garlic, minced

1 cup olive oil

2 teaspoons salt

1 teaspoon black pepper

2 teaspoons minced oregano

Toasted bread rounds

Combine tomatoes, basil, garlic, oil, salt, pepper and oregano in bowl. Let marinate in refrigerator 2 to 3 hours.

Serve on toasted bread rounds.

Makes enough for 12 appetizers.
