DEAR SOS: I’m throwing a 55th birthday party for a special person in my life and I want to surprise him with his favorite shrimp cocktail from Las Casuelas Terraza in Palm Springs.

DEAR SUSIE: What a great birthday surprise this unusual treatment for shrimp cocktail will be.

LAS CASUELAS TERRAZA SHRIMP COCKTAIL

3 tomatoes, diced

1 cucumber, peeled, seeded and diced

1 medium white onion, chopped

1 small bunch cilantro, chopped

1 (12-ounce) can red chile sauce

1 (7-ounce) bottle ketchup

Juice 1 large lemon

1 1/2 teaspoons prepared horseradish

1 (6-ounce) can tomato juice

2 pounds shrimp

Combine tomatoes, cucumber, onion and cilantro in bowl.

In separate bowl, blend together chile sauce, ketchup, lemon juice, horseradish and tomato juice.

Cook shrimp in pan of simmering water to cover just until shrimp turn pink. Drain, reserving 1 cup shrimp cooking broth. Peel and coarsely chop shrimp. Add reserved broth to tomato sauce mixture. Add shrimp and mix well.

Serve in cocktail glass.

Makes 8 to 10 servings.
