It’s the world’s most widely eaten food. It provides more of people’s energy and protein than any other food and is often called the staff of life. What is it? Bread.

In many parts of the world, people make bread by hand, much as ancient bakers did. In most industrial nations, it’s made by machines in commercial bakeries.

Yeast breads are the most popular in the United States, Canada and many parts of Europe. In other parts of the world, flat breads like tortillas and matzo are more common. And quick breads such as muffins and biscuits, which are easy to prepare, are often baked at home.
