Yes, you can make a paella in a turkey roaster if you don’t have the right pan. But if you want to get the real thing, here are a few good sources:

* The Spanish Table, a Seattle-based mail-order business, sells many products imported from Spain. Its La Ideal brand paellas from Garcima S.A. in Valencia, Spain, range from tiny four-inch black-and-white speckled enamel pans for $6 to 45-inch stainless steel paellas for $400, intended to serve 120 people. Also sold are Garcima’s portable propane-powered gas rings for cooking outdoors. Wooden paella spoons, paella rice and other Spanish tools are sold as well.

* La Espanola is a shop closer to home that carries a wonderful section of Spanish foods and utensils. Its pans range from $8.95 for a paella to serve one to $150 for a paella to serve 50.
