In the right hands, the sweet, hard-skinned squashes of the season are wonderfully versatile.

Sage: Chef-owner Richard Mead bakes a small pumpkin with a cornbread pudding stuffing full apples, Gorgonzola, candied pecans, caramelized onions and andouille sausage.
