New Patina chef, Hyperion Public, Paiche’s spring opening

New head chef at Patina: Joachim Splichal, founder of Patina Restaurant Group, names Charles Olalia executive chef of Patina, his landmark restaurant at the Walt Disney Concert Hall downtown. Olalia, 29, was formerly chef de cuisine and started at the restaurant in 2010 after working as a private chef with Oracle and in the kitchens at the French Laundry in Napa Valley and Guy Savoy in Las Vegas. 141 S. New in Silver Lake: Hyperion Public has opened in Silver Lake, serving “contemporary American cuisine with light organic options, paired with craft and local tap beers, wine and cocktails.” Chef-partner Paddy Aubrey calls the menu “unique American”: fried chicken with spicy blueberry sauce and bacon slaw, turkey meatloaf with cauliflower purée, gourmet burgers and a daily “mac of the moment.” Designed by Claire Stansfield, the restaurant is divided into two settings: a “rough luxe” main dining room and a dark, inviting lounge. More on Paiche: Publicity-wise Paiche keeps teasing out details about the coming restaurant, a Peruvian izakaya from chef Ricardo Zarate and business partner Stephane Bombet. The Japanese-Peruvian menu will feature plenty of the fish for which it is named, a prehistoric Amazonian fish that can grow to 600 pounds: sashimi style, grilled, stewed with cilantro black beer sauce, etc. The menu is categorized into: abrebocas and ensaladas, ceviches sashimi style, tiraditos, causas and sushi rolls, anticucho grill, frituras, cocina caliente and verduras.
