Beef Sandwiches Designed for Outdoor Eating When a Grill Is Not Available

Occasionally a grill is not readily available for outdoor get-togethers and picnics. To overcome this problem, pack up some Guacamole-Topped Beef Sandwiches to carry with you.

Use thinly sliced cooked beef and a lot of tasty extras like olives, lettuce, tomato, onion rings and cheese. Wrap securely in plastic wrap and carry in an insulated bag, keeping out of direct sunlight.

GUACAMOLE-TOPPED

BEEF SANDWICHES

1 avocado, peeled and seeded

1 teaspoon lemon juice

3 tablespoons sour cream

3 tablespoons prepared taco sauce

4 kaiser rolls, split

2 tablespoons butter or margarine, softened

1/4 cup sliced black olives

4 red-leaf lettuce leaves

4 tomato slices, cut 1/4-inch thick

1 slice red onion, separated into rings

4 slices Jack cheese

12 ounces thinly sliced cooked beef

Coarsely mash avocado in small bowl and sprinkle with lemon juice. Thoroughly combine avocado, sour cream and taco sauce. Spread surface of each kaiser roll with equal amount of butter and avocado mixture. On bottom half of each roll, layer equal amount of olive slices, 1 lettuce leaf, 1 tomato slice, equal amount of onion rings, 1 slice cheese and 3 ounces beef. Close sandwiches and wrap each in plastic wrap. Makes 4 servings.
