Eat your heart out, Escoffier. Four of Orange County’s finest chefs demonstrated Tuesday night that coronary and diabetic patients--or anyone on a restricted diet--can eat subtle, creative and tasty gourmet meals. The chefs offered selections from their regular menus that are unusually low in fats, salt and sugar but require no special dietary ingredients. Guests at the dinner, which helped celebrate National Nutrition Month, included 150 patients of the Rehabilitation and Conditioning Center at Western Medical Center in Santa Ana. Donating their talents were executive chefs Murat Day of Chez Cary in Orange, above (foreground), with assistant Albert Lusser, and, not shown, Fred Mensinga of the Anaheim Hilton, Maurizio Binotto of the Westin South Coast Plaza and Timothy Owen of Granville’s Restaurant in the Disneyland Hotel. Day and Lusser are preparing Spanish shrimp and lemon rose garnish with salmon.
