Lemon, Apple Add Tang to Lenten Fish

A nutritious, low-calorie (164 per serving) Lenten dinner microwaved in its own serving dish is easy to prepare and ready to serve minutes.
LEMON-APPLE FISH ROLLS
4 sole, cod or red snapper fillets
Grated zest of 1 lemon
1 teaspoon dried dill weed
3/4 cup plus 2 tablespoons apple juice
Juice of 1/2 lemon
2 tablespoons finely minced onion
1 tablespoon unsalted margarine
1 tablespoon flour
1 tablespoon chopped parsley
Sprinkle fish with half lemon zest and dill. Roll up each fillet. Place seam-side down in 8-inch round microwave-safe dish.
Combine 3/4 cup apple juice, lemon juice, onion, remaining lemon zest and dill. Pour over fish. Dot with margarine. Cover loosely with plastic wrap. Microwave on HIGH (100%) power 3 minutes.
Uncover, spoon cooking liquid over fish. Cook, covered 3 to 4 minutes longer until fish flakes easily with fork. Remove fish to serving dish. Let stand, covered, while making sauce.
Reserve cooking liquid in dish. Gradually blend remaining 2 tablespoons apple juice into flour. Stir into cooking liquid. Cook, uncovered, 3 to 4 minutes, stirring twice, until sauce boils and slightly thickens. Add parsley. Spoon over fish. Makes 4 servings.
Note: Additional cooking time may be needed in lower than 600 watt microwave ovens.
