LIGHT STYLE : Just Peachy

This version of Peach Melba has it all: glamour, flavor and low (as low as we can get them) calories.

Using only fruit and just a teeny dollop of low-fat yogurt, this Melba is only 43 calories per serving, compared with 150 calories for the usual type that uses heavy syrups, ice cream and fat-laden toppings.

PEACH MELBA

3 peaches, peeled, pitted and halved, or 6 canned (water-pack) peach halves

6 tablespoons pureed raspberries

6 tablespoons low-fat vanilla yogurt

Place 1 peach half in each of 6 parfait glasses. Place 1 tablespoon raspberry puree on each peach. Top each with 1 tablespoon vanilla yogurt. Makes 6 servings.

43 calories; 9 mg sodium; 1 mg cholesterol; trace fat; 10 g carbohydrate; 1 g protein; 1 g fiber; trace calories from fat.
